Hugely talented Captain Michael Lyrintzis has more than two decades of seafaring experience, having helmed numerous motor yachts including AMZ, Kintaro and Sinatra during his high achieving career.
Captain Michael’s unparalleled knowledge of the Mediterranean and Greek seas means he is perfectly placed to share secret pristine swimming spots and hidden away beaches with his fortunate guests that many others may never get to discover. Bilingual in Greek and English, he enjoys diving, fishing and soccer in his spare time.
Chef & Cuisine
Award-winning chef Dimitris Giannopoulos is a skilled all-rounder whose passion for Mediterranean cuisine knows no bounds. An expert pastry chef, he has trained in many cooking disciplines and earned his stripes working in some of Greece’s finest establishments. He specializes in creating remarkable gastronomic fare from bio, seasonal and locally sourced ingredients with his sole aim to provide an unforgettable dining experience to guests.
Subtle and delicate influences from Asia infuse signature dishes from further afield including soba noodle salad with cucumber and mango, beef tartar with Asian flavours and seafood kritharoto with mussels and shrimps.
A typically light Mediterranean spread might start with tricolour cherry tomatoes, carob rusks and katiki domokou followed by shrimps with fennel and saffron. A main of sea bass with smoked aubergine cream, inspired by his Greek roots, could be finished off with orange pie and yoghurt mousse with exotic fruits.
For heartier appetites, Dimitris offers green salad with pears and gorgonzola followed by beef carpaccio with caramelized onions. A saffron risotto with beef tenderloin and red wine sauce is perfectly rounded off by tiramisu with mandarin sorbet.
