The Captain
Captain Rosario Fernandez and her crew will take great care to ensure you get every benefit while on board. Hailing from Cadiz in Spain, she grew up on the water and has always felt at home there. Gaining experience on Tall Ships, she sailed around the US East Coast, Europe and the Mediterranean.
A veteran of Paula III, Molina, Hide ‘n Sea and Argonauta V, Rosario has extensive experience of Just Sayin’s regular cruising grounds in the Bahamas and New England.
The Experience
An incredible light-filled main salon in classic cream hues with wood panelled accents creates the benchmark for this sophisticated and highly sought after charter craft. Indeed, she possesses an overriding feeling of space wherever you look which belies her size.
A feature staircase and screen divided classically panelled club style dining room, with impressive circular light detail, could lead you to mistake this convivial space for that of a grand hotel, such is the attention to detail.
A similarly light and airy sky lounge with elegant seating arrangement, dining area and old school style panelled bar is the perfect retreat for pre or post dinner drinks. Main aft deck dining banquette style brings intimacy to the al fresco setting and provides an ideal spot for lazy lunches while the bridge deck aft dining area is even more relaxed and low key, partly sheltered by the sun deck and thus a great choice for a buffet-style breakfast.
On the sun deck, you’ll find a circular jacuzzi with chic white furnished lounge area where a cocktail or two can be enjoyed as you lap up the sunset. Watersports equipment includes jet skis, paddleboards, wakeboards, water skis and fishing and snorkelling gear.
The Cuisine
The talented chef on board Just Sayin’ aims to wow every day with an impressive repertoire of recipes for all occasions. Years of experience in high-end hospitality ensure all tastes and dietary requirements are delivered with flair in every menu.
Enjoy a hearty breakfast of eggs Benedict with bacon, pancakes and fresh fruit, eggs Florentine with grilled ham and waffles or a crispy frittata with smoked salmon bagel.
A typical lunch menu might begin with seafood bisque, avocado crab salad or fresh tuna tartare and continue with sweet and sour pork and Asian vegetables, soy glazed salmon and stir fry vegetables, grilled swordfish with melted radicchio or short ribs with seared scallops and wasabi mash.
Delectable suppers feature shrimp cocktail, melon and prosciutto and tuna ceviche, continuing with beef wellington with roast potatoes and sautéed vegetables, paella, roast chicken with mash and grilled vegetables or butter poached lobster served with asparagus risotto.
